Vegan Sun-dried Tomato Burgers

I adapted a recipe originally created by Philipp Ertl to create these perfect meatless burgers. You can find Philip’s original  ‘pigs in blankets’ recipe on his Exceedingly Vegan website. My adaptation is below:


  • 140g sundried tomatoes
  • 10 capers
  • 200g ground almonds
  • 3tsp miso paste
  • 2tsp low salt soya sauce
  • 1tsp thyme
  • 3tsp heaped smoked paprika
  • 1 clove minced garlic
  • 50g bread crumb
  • 20g nooch


  1. Mince tomatoes and capers.
  2. Add rest if ingredients and mix with hands to form a ball.
  3. Divide into 4 x 100g and shape into burgers
  4. Fry for 5 mins each side or bake at 170 for 15 mins (if you choose to bake them then place a bowl of water below the shelf that the burger are on to keep them from drying out too much)
