Ingredients:
- 4 carrots (peeled)
- 2 tbs olive oil
- 1 tbsp liquid smoke
- 1 tbsp lemon juice
- ½ tsp salt
- 1tsp cider vinegar
- 1tbsp caper juice
- Dill (fresh or dried)
Method:
Peel carrots using a standard peeler until the carrot gets too thin to peel any more strips off.
Boil carrot peelings for 10 mins
Combine other ingredients in a baking dish, mix well
Add drained carrot peelings to other ingredients
Mix gently and allow to stand until oven is heated to 180
Bake in the oven for 15-20mins
Cool then eat on a bagel or crackers with vegan cream cheese and a sprinkling of fresh or dried dill.
