Chana Saag

Meals for the day before a race

This is my very favourite meal! Fragrant and so satisfying.

Ingredients (will feed 2 large appetites):

  • 2 stalks of celery (washed and chopped)
  • 2 inches of fresh ginger (peeled and diced)
  • 1 garlic clove (peeled and diced)
  • 1 tin of chickpeas (drained and washed)
  • 500g frsh spinach (washed)
  • 1 tin chopped tomatoes
  • 1 tsp hot paprika
  • 1 ½ tsp smoked paprika
  • ½ tsp salt
  • 1 tsp turmeric
  • 1tbsp oil
  • Basmati rice


  1. Cook celery, ginger and garlic in oil until soft
  2. Add chickpeas and tomatoes and heat through
  3. Add spinach and cook until softened
  4. Serve over rice (prepared by soaking for at least 20 mins before rinsing and then cooking for to mins less than instructions on packet)
